Ashmead's Kernel
Strong, sweet-sharp intense flavour reminiscent of fruit or acid drops and of Nonpariel, but sweeter than its probable parent; firm, white flesh. Long esteemed by connoisseurs, and recently regained popularity in England and North America. Grown commercially on small scale in England, but dull colour, poor crops weigh against it.

Bramley Seedling
Cooks to pale cream puree with strong acidity and flavour; rarely overwhelmed in the most sugary and highly spiced recipes. With keeping, acidity falls and home stored fruit can serve as sharp eating apples in spring, but commercially stored fruit retains high acidity.

Golden, flushed in brownish red. Often honeyed flavour; sweet, well balanced. Crisp, juicy to the end.

Crispin
In good condition sweet, honeyed, crisp, juicy flesh, similar to Golden Delicious but coarser textured. Can be quite scented, but can be much less interesting. Good used fresh in vegetable salads. Cooked, tends to keep shape; sweet, light flavour.

Discovery
Well ripened on tree, bright red with crisp, juicy, often pink stained flesh and hint of strawberry flavour. Main early commercial variety, as well as popular garden variety

George Cave

Grenadier Cookers
Cooks to pale cream, sharp puree, but not frothy, sweeter quality of Codlins, and an improvement on Keswick Codlin' as it produces much larger fruit. Now first cooking apple of the season on sale.

Howgate Wonder Cooker
Eaten fresh, quite sweet, juicy, pleasant. When cooked it keeps its shape and is very light; suitable for baked apple. Exhibition garden variety, also grown small extent commercially.

James Grieve
Savory, juicy, crisp yet melting flesh with strong acidity, which can be overpowering early in its season. Acidity mellows and flesh becomes soft and marrowy, yet flavour does not fade. Picked early, grown in the north it cooks well; keeps it shape; makes sweet, delicate "stewed apple" Remains valued garden variety. Formally market apple, but bruises easily.

Attractive with rich, honeyed, almost aromatic flavour; crisp, juicy, nearly yellow flesh. Acidity of Jonathan gives less cloying and a balanced taste.

Like small, early Cox, aromatic, intensely flavoured, sharper, not as complex as Cox, but robust and good. Widely grown in gardens and on a small scale commercially.

Worcester Pearmain
Bright red and sunbaked, densely sweet with intense strawberry flavour; firm, juicy, white flesh. Often picked early and less colourful and tends to be chewy. Main early autumn commercial variety. Its bright fruits and distinctive blossom - almond opening to silvery white.
